How do you like your eggs?
If you haven’t noticed- we’re big on eggs around here. In fact, if it wasn’t for eggs and cheese, there wouldn’t be very much of the Two Chicks menu left to enjoy! But something we’ve taken note of over the years is that not everyone knows how to order their eggs so that they come out just how they like them. So let’s talk about it and figure out to get your eggs to turn out just like your mom used to make!
Scrambled
I know right about now you’re thinking I’m crazy. Scrambled eggs are scrambled eggs. But truly there are more variations on scrambled eggs than you might think!
Soft Scrambled- These eggs will come scrambled, but cooked for the shortest amount of time possible at a low temp. Leaving your huevos slightly damp and moist.
Hard Scrambled- Order these and you eggs will come cooked thoroughly and firm in texture. These eggs are typically more dry, but hey! Some people are into that sort of thing!
Country Scrambled- When ordering in a restaurant you might notice that scrambled eggs are consistently yellow and the same texture throughout. That’s because we crack our eggs before hand and blend them to improve our efficiency and consistency during crazy brunch rushes. If you are used to the fluffy eggs that have the occasional white spots throughout, you might be looking for country scrambled eggs! These eggs are cracked into the pan and then scrambled as they cook.
Egg Whites Only- A great option if you are cutting back on fat or cholesterol intake.
Vegan Eggs- If you are looking for a vegan dish that feels like an egg dish, give vegan eggs a shot. At our restaurant we carry the “Just Egg” brand which is a plant-based egg substitute that can be added to any egg dish! Not every restaurant offers vegan egg substitutes so be sure to check ahead!
Fried
This is where things get tricky. Eggs are a very texture forward food, so if you aren’t sure how to order your favorite egg style it could throw off your whole meal. Let’s figure out which eggs are your fave, so we can put them on your plate!
Sunny side up- These are the movie stars of the egg world. We use these eggs for our photos because they are a great way to show off that rich yolky color. They look great on screen, but truthfully are one our least-ordered options. These eggs are the runniest of the egg options.
Over Easy- Unlike sunny side up eggs, over easy eggs are flipped in the pan to fully cook the opposite side while still giving you plenty of run.
Over Medium- The most popular egg choice. Over medium eggs have firm whites with mostly runny yolks. A safe bet if you’re not sure!
Over Hard- If you like your burgers cooked well done, this is the egg for you! Firm whites and fully cooked yolks leave no runny mess on your plate.
Other Options
Poached- You’ll find this type of egg on your benedicts but you can order them with any meal! Poached eggs are cracked into a pan of very hot water and a little vinegar to temperature and then pulled out and strained. They are not cooked in any oil so poached eggs are considered a healthier way to cook eggs. Poached eggs are usually cooked soft with cooked whites and runny yolks. You can order poached hard eggs, but these take a considerable more amount of time to cook than soft poached eggs so you might have a bit more of a wait.
Basted- Similar to sunny side up because they are not flipped, but instead the top of the egg is cooked by spooning hot oil or butter over the top of the egg.
